Prepares and supervises the preparation of recipe and menu items for Parkland patients, café customers and catered events. Supervises and trains production staff in their work activities.
-Must have an Associate Arts/Science degree in Culinary Arts.
-Must have three years of experience in a lead cooking capacity as an Associate Sous Chef or Sous Chef in hospital foodservice, restaurant, or related institution.
Equivalent Education and/or Experience:
-May have an equivalent combination of education and/or experience in lieu of specific education and/or experience as stated above.
-Must be certified as a Food Service Manager by the City of Dallas, Department of Health and Human Services OR
-Certified Food Safety Manager by the National Registry of Food Safety Professionals OR
-Certified ServSafe Food Safety Manager by the National Restaurant Association OR obtains one of the above certifications within one year of placement into job.
Skills or Special Abilities:
-Must be able to train, supervise and schedule staff in the preparation of food items and safe food production techniques.
-Must be able to communicate effectively with departmental personnel.
-Must be familiar with a variety of foods, seasonings, recipe procedures, ingredient measurements and knowledge of time estimates for food preparation.
-Must have proficient knowledge of the use and care of institutional kitchen equipment.
-Must be able to read and follow recipe instructions and food production guides and develop and test new recipes.
-Must have leadership skills and provide excellent customer service.
